So I always thought religion in the wizarding world was a bit strange. Why would wizards celebrate Christmas and Easter? Was Jesus a wizard?As a Jewish woman, I have always thought Hermione was a Jew. Severus' Tzimmes

INGREDIENTS

(This is mostly done by eye, these are the approximate measurements. This is a very forgiving dish, I often add too much dried fruit, it is still very good)

6 Large orange yams, peeled and cut into 1-2 inch pieces 

6 Large white sweet potatoes, peeled and cut into 1-2 inch pieces

8 carrots peeled and cut into 1-inch rounds 

 1 1/2 - 2 cups dried apples

1 ¼ - 2 cups dried cranberries

3- 5 cups pitted prunes

YOU MAY SUBSTITUTE ANY DRIED FRUITS (Cherries instead of prunes is amazing) BUT TRY AND BE CLOSE TO 6-9 CUPS 

2 cups orange juice

1/2 cup honey

1/2 cup brown sugar

2 tsp cinnamon

1 tsp salt

1/2 tsp black pepper

1 1/2 cups chicken or veggie broth 

 

DIRECTIONS

  1. Add cut potatoes and carrots to a large, heavy bottom pot. I have heard that an instant pot works, but I have not used one
  2. Top with dried cranberries and apples (Leave prune till later)
  3. In a separate bowls whisk together orange juice, honey, brown sugar, cinnamon, salt, and black pepper. Pour mixture over the fruits and vegetables in the pot.
  4. Add your broth to the pot, covering the vegetables halfway. Heat pot over medium high until it begins to simmer. Stir the ingredients once gently. Reduce heat to a gentle but constant simmer. Cover the pot. DO NOT DISTURB POT, MAGIC IS HAPPENING UNDER THE LID
  5. After 45 minutes, open the pot and gently stir again. Place pitted prunes on top of the simmering ingredients.
  6. Cover pot. Continue to cook on lowest heat for another 15 minutes, until potato pieces are tender and prunes have warmed and softened. 

(Don't cook too long, or the prunes will dissolve-- it will make a nice sauce for the tzimmes, but it won't look so pretty on the table.)
