Hermione's Matzah ball soup

The soup part is really quite simple. Of course you can use store bought stock, but making a stock from scratch just involves adding fragrant veggies (Carrot, celery, onion, garlic, etc.) to a pot. Placing the bony part of a chicken (wings, legs, and neck) on top. Then covering with cold water and allowing to simmer for a few hours.
Now, the kneidlach, or matzah balls.
INGREDIENTS
4 eggs slightly beaten
4 tablespoons oil or chicken fat
4 tablespoons soup stock or water
1 cup matzah meal, you may need more, you may need less. Just go by consistency
Salt to taste
DIRECTIONS
- Beat eggs slightly and then add other ingredients, except matzah meal, and mix.
- Add matzah meal gradually until thick. Stir. Refrigerate for 20 minutes in a covered bowl.
- Wet hands and form into balls about the size of a golf ball. Drop into bubbling chicken soup or into a large wide pot into which 1 quart water seasoned with salt has been added and has come to a boil.
