Hermione's Matzah ball soup

The soup part is really quite simple. Of course you can use store bought stock, but making a stock from scratch just involves adding fragrant veggies (Carrot, celery, onion, garlic, etc.) to a pot. Placing the bony part of a chicken (wings, legs, and neck) on top. Then covering with cold water and allowing to simmer for a few hours.

Now, the kneidlach, or matzah balls.

INGREDIENTS

4 eggs slightly beaten

4 tablespoons oil or chicken fat

4 tablespoons soup stock or water

1 cup matzah meal, you may need more, you may need less. Just go by consistency

Salt to taste

DIRECTIONS

  1. Beat eggs slightly and then add other ingredients, except matzah meal, and mix.
  2. Add matzah meal gradually until thick. Stir. Refrigerate for 20 minutes in a covered bowl.
  3. Wet hands and form into balls about the size of a golf ball. Drop into bubbling chicken soup or into a large wide pot into which 1 quart water seasoned with salt has been added and has come to a boil.
