Jewish Apple Cake

This is my Great Grandmothers recipe. It is not as organized as the other recipes this isn't written down anywhere
Preheat to 325°F.

Filling

Mix the following

  1. 1-2 Large apples, peeled and diced.
  2. 2-4 cup mixed dried fruit (raisins/dates/apricots/craisins) cropped if needed
  3. 1/4 cup white sugar
  4. 1/4 cup brown sugar
  5. 1 Tbsp Cinnamon

Let sit for a while until juicy in a separate bowl.

Batter

Mix these together

  1. 2 tsp Vanilla
  2. 4 eggs
  3. 1/3 cups orange juice
  4. 1 cup oil
  5. 1 4/3 cup sugar

Then slowly incorporate:

  1. 2 tsp Baking Powder
  2. 3 cups flour

Grease a bunt pan in butter and flour, leave no part uncovered. then layer the batter and filling into in, (batter, filling, batter, filling.)

GENTLY MIX (Just swirl a knife through the mix, do not fully incorporate... IDK why... its just how it works.)

Cook for 1 hour or until a toothpick comes out clean.
